Background
Some cooking devices use water as a cooking medium (i.e., steam) or as a coolant. While these uses do not have a specific water use rate, best management practices do exist. ENERGY STAR®-qualified steam cookers are 90% more water-efficient than standard steam cookers. Standard steam cookers average 40 gallons of water per hour, whereas ENERGY STAR®-labeled steam cookers average three gallons of water per hour.
No explicit maximum water use requirement exists for ENERGY STAR® qualification, and increased water efficiency is a result of increased energy efficiency.
Requirements and certification
All commercial steam cookers must be ENERGY STAR®-labeled.

Installation is to be field-verified by the Inspector. The commercial food steamer must be installed by the time of inspection.
